One of the blogs I follow has a recipe called "breakfast cookie" that sounded awesome, so I decided to try it out. It's basically oatmeal that is left in the fridge overnight to soften. You can experiment with the toppings as you'd like. This is how I did mine (and it was DELISH!)...
Breakfast Cookie
1/3 cup oats (I used this)
1 heaping teaspoon almond butter
1/2 mashed banana
Splash of almond milk
pinch of cacao nibs
pinch of cinnamon
pinch of raw pumpkin seeds
Combine ingredients and flatten with a spoon on a plate. Or-do as I did-simply combine in a bowl and eat with a spoon! YUM!
