Hey Bloggies!

I'm baaaaaack! I had day surgery on Thursday, but I'm back in action now. I'm also hoping to do more updates! So, here we go. Nothing too exciting to report today, but I do have two awesome recipes to share!

The first one I have is from Jillian Michaels' new cookbook, Master Your Metabolism Cookbook. The book hits the shelves this week. I want it! This is a simple "granola" recipe that you can crumble over greek yogurt, top with berries and drizzle with honey:

Mix 1 cup quinoa (uncooked, rinsed and well drained), 1/4 cup flaxseed, 1 T honey, and 1 T olive oil. Spread on a baking sheet and bake in a 375 degree oven until lightly browned. Let cool and crumble. I overbaked mine a bit (oops-forgot about it!), but it's really great! I can't wait to make it again.

I found the second recipe in my "Women's Health" magazine. There is a page about the "tone it up" website and it included this recipe. I checked out the website-there is a blog that has tons of great recipes that I plan on trying! Here is the recipe for "Tone it Up Peanut Butter Protein Balls". Let me warn you: these are ADDICTIVE! So good. Even my husband, who normally doesn't have a sweet tooth at all, loved these!

Tone it Up Peanut Butter Protein Balls
1 cup natural peanut butter
1 cup honey
1 cup old-fashioned oatmeal
1 cup diced apricots
1 cup sliced almonds
3 scoops vanilla protein powder
Cinnamon to taste

In a medium-size pot, heat honey & peanut butter on stove over medium heat until texture is runny. Mix in apricots, nuts, oatmeal & protein powder. Stir until all ingredients are well coated. Let mixture cook in fridge, roll into bite-size balls.

YOWZA!
