Recipe that made my Husband a Very Happy Man!

Anand is always asking me: "when are you going to cook me some Indian food?". Well, I do cook some Indian food, but I have a really hard time because he does most of the cooking and does it all off the top of his head. As in, no recipes. I am a recipe girl. I need it written down and I follow it to a "T". I have tried watching him and writing along with him, but it's hard because he doesn't measure anything-just whatever feels right to him. That is tough for me! There has not been one thing he has made that I haven't liked, but I especially like his dal recipes. The issue with most of his dal recipes is that he uses a pressure cooker. I'm scared to death of that thing! I just know it's going to blow up in my face! So, when I discovered a new blog called "Spicy Habibti" and the writer said it's a South Asian cooking blog, I was all over it! When I saw the recipe for "Red Lentil Soup" and it calls for one of my favorites, masoor dal, I knew that if I made that for Anand I would have him wrapped around my finger forever...wink wink! So, I made it and it was delicious! And I was right-he's a happy man!

Red Lentil Soup

1 Cup Masoor Dal (red lentils)
1/4 tsp. turmeric
1/2 tsp. ground black pepper
1/4 stick cinnamon
1 tsp. salt
1 tsp. cayenne pepper
1 tsp. cumin powder
1/2 onion, diced
Fresh Cilantro

Place all ingredients except onion & cilantro in a medium saucepan. Fill the pot with water about 1-2 inches above the ingredients. Bring to a boil, then decrease heat to a low simmer. Cover & cook until the lentils are soft and tender (porridge-like consistency)-about 40 minutes. Meanwhile, lightly brown the onions with olive oil in a small pan. After lentils are cooked, add the cooked onions to the soup. Cook for 1-2 minutes. Salt to taste & garnish with cilantro. I served this over brown basmati rice.
