Meal Plan!

I haven't done one of these in a few weeks and was feeling the need. It makes the weeks so much easier having a plan (and healthier too). I browsed through my latest issue of Clean Eating magazine and was immediately inspired! I made a list and went to get groceries. I spent a couple of hours in the afternoon prepping and now I have 5 days worth of breakfasts, lunches, and snacks ready to go. I also made a delicious & healthy meal for tonight's dinner. I packed my gym bag for tomorrow morning, and set the coffee. I'm ready for the week!

Here is the plan:

Monday:
Breakfast: Scrambled eggs
Snacks: Green tea, apple with natural PB
Lunch: leftovers
Dinner: Millet Patties with Garlic Aoli
Steamed broccoli & cauliflower

Tuesday:
Breakfast: hard-boiled eggs
Apple with natural PB
Snack: Green tea/orange
Lunch: Taco Bowl
Snack: Green Tea/carrot sticks with PB
Dinner: Rosemary-Braised Turkey Cutlets with Broccoli, Mandarins, & Couscous

Wednesday:
Breakfast: hard-boiled eggs, apple with PB
Snack: Green tea/carrot sticks with PB
Lunch: Taco Bowl
Snack: Green tea/orange
Dinner: Thai black rice salad with wild salmon, steamed green beans

Thursday:
Breakfast: hard-boiled eggs, apple with PB
Snack: Green tea/orange
Lunch: Taco Bowl
Snack: Green tea/carrot sticks with PB
Dinner: leftovers

Friday:
Breakfast: hard-boiled eggs, apple with PB
Snack: Green tea/orange
Lunch: Leftovers
Snack: Green tea/carrot sticks with PB
Dinner: Chicken Paprikash & roasted potato wedges, steamed broccoli

I boiled a dozen eggs for breakfasts & also to have on hand for snacks. To make the taco bowls, I sautéed a lb. of ground turkey breast with onion, cumin, & paprika. I added black beans & frozen corn and sautéed until heated through. I packed the mixture into separate containers (glad ware) and have bags of shredded romaine set beside the lunches to serve on. I also added some corn salsa & avocado slices to each bowl.
I will add the recipes as I prepare them this week. All dinner recipes are from Clean Eating magazine.
