On Saturday night, I had a craving for coffee cake. No idea why...it just sounded good. So, I went to my friend, GOOGLE, to search for a single serving coffee cake. I saw a recipe on THIS BLOG and thought I'd try to "healthify" it. Worked like a charm!
Coffee Cake in a Mug

Ingredients:
1 Tbsp. Butter (try Kerrygold grass fed-it's great!), divided
1/2 tsp. Stevia extract
1 Egg
2 Tbsp. Greek Yogurt
1/8 tsp. Vanilla
1/4 C + 2 Tbsp.Almond Meal
1/8 tsp. Baking Powder
1 tsp. Brown Sugar
1 tsp. Cinnamon
Directions:
Add 1/2 TBSP. butter into mug. Soften in microwave for 10 seconds (not melt, just soften). Stir and combine the following in mug: stevia, egg, greek yogurt, vanilla, 1/4 cup of the almond meal, and baking powder. For the "crumb mixture" in a small bowl, combine remaining butter, 2 TBSP. almond meal, brown sugar, and cinnamon. Add to mug on top of batter. Microwave for 2 minutes, 30 seconds. Cool for a minute or so and dig in. Yum!
