Yesterday, there was a cool fall breeze in the air that just screamed soup to me. I found this recipe via google on the FOOD website. It was super easy and was really good-the girls loved it!
Easy Black Bean Soup
Ingredients:
3 TBSP Olive Oil
1 Onion, chopped
1 TBSP Cumin
2-3 Garlic Cloves
3 Cans Black Beans
Chicken Broth (I used 1 box of Pacific brand)
Salt & Pepper, to taste
Directions:
Add oil to Dutch oven over medium-high heat. Add onions and sauté until translucent. Add cumin. Cook 30 seconds, then add garlic and cook for another 30-60 seconds. Add 2 cans of beans (with liquid) and broth. Bring to a simmer, stirring occasionally. Turn off heat. Using an immersion blender, blend the ingredients in the Dutch oven (you could also transfer to a blender). Add third can of beans and bring to a simmer.
Garnish with whatever you like-cilantro, chopped onion, hot sauce, cheese, etc.
