Inside-out Chocolate Pumpkin Pie Filled Cookies!

After seeing this blog post, I HAD to make these!

I doubled the batch since I wanted to put them in "Boo Bags". Well, mine did not turn out pretty like in that picture! I could not roll them without them falling apart, so I improvised! I made a well with them and added a scoop of the filling, so they were more like a "thumbprint" cookie. I used sunflower seed butter for the filling-yum!

Verdict:
Visually appealing: NO!
Taste: YES! So good!
I didn't put them in the Boo bags as not to creep anyone out, but I will bring them into work for everyone to try.
