I saw this recipe in the February 2012 issue of Oxygen magazine. It sounded fabulous, so I thought I'd try it...I'm so glad I did!
Quinoa & Edamame Super Mix
Ingredients:
1 cup dry quinoa
1 1/2 cups carrot juice
1/2 cup water
1/4 cup sliced almonds
1 cup edamame, shells removed
1 tsp. garlic powder
2 Tbsp. chopped onions
Cilantro, to taste
Black pepper, to taste
Directions:
1. Rinse & drain quinoa. Meanwhile, bring carrot juice & water to a boil in small saucepan.
2. Add quinoa and cook 15 minutes, or until you can fluff with fork.
3. Add remaining ingredients and stir to combine. Serve. Refrigerate the remaining mix for up to 5 days.

Saturated fat: 0 g
Cholesterol: 0 g
Sodium: 40 mg
Total carbohydrates: 25 g
Dietary fiber: 4 g
Sugars: 1 g

Fit Fact from Oxygen magazine: Quinoa (a grain-like seed) and edamame (green soybeans) are a dynamic duo. Both foods contain all nine essential amino acids to build & repair muscle, making each a complete protein. Plant foods are not typically complete protein sources, so these two are special.
