I recently bought some almond meal at Trader Joe's after seeing various recipes on blogs raving about it. You can use it in place of flour in baked goods to up the protein. I had several very ripe bananas on the counter that were begging to be made into banana bread, so when I found THIS RECIPE on a gluten-free blog, I decided to give it a try. Am I ever glad that I did-it was SO GOOD! I highly doubt I will ever make banana bread with flour again-this was so moist and flavorful!
Almond Meal Banana Bread (recipe adapted from www.glutenfreenaturally.com)
Ingredients:
3 cups blanched almond flour
1/2 tsp. sea salt
1 1/2 tsp. baking soda
1/2 cup sugar (the original recipe calls for xylitol, but all I had on hand was sugar so I used that instead)
2 tsp. vanilla extract
3 eggs
2 Tbsp. Oil (I used canola)
4 very ripe bananas, mashed
Directions:
Preheat oven to 350 degrees. Spray 1 loaf pan with cooking spray.
Mix the dry ingredients in a large bowl. Blend the wet ingredients and add to the flour mixture. Mix well until batter comes together. Pour batter into greased loaf pan. Bake for 45 minutes or until a toothpick comes out clean in the center.
