Energy Balls (Balls of Energy!)

One of my ME First friends sent this recipe. These balls are gluten-free and no-bake! I knew I had to try it considering it has all of my favorite things in it: peanut butter, honey, chia, chocolate...YUM! They are fantastic and were a hit with the family! Thanks Charlotte!

Balls of Energy

Ingredients:

1 Cup Gluten-free Oats
1/2 Cup Natural Peanut Butter
1/3 Cup Honey
1 Cup Unsweetened Coconut Flakes (I grated from a dry coconut-YUM!)
1/4 Cup Ground Flax
1/4 Cup Chia Seeds
1/2 Cup Mini Chocolate Chips
1 tsp. Vanilla

Directions:
Mix all ingredients together in a large bowl. Roll into balls and place on parchment paper. Store in an airtight lid.
