This week, I decided to mix up my usual turkey meatballs. I saw this recipe on The Girl Who Ate Everything and decided to give it a try with a few tweaks to add in some veggies and keep it gluten-free. The original recipe included a dipping sauce, but I did not make it. These were a hit!
Asian Turkey Meatballs (adapted from The Girl Who Ate Everything)
Ingredients:
1/4 Cup Gluten-free Oats
1 1/4 lbs. Lean Ground Turkey Breast
1 Egg
1 Tsp. ground Ginger
3 cloves Garlic, minced
1/2 tsp. Salt
1/4 Cup Cilantro, chopped
3 Scallions, chopped
2 ribs Celery, finely chopped
1 Red Bell Pepper, finely chopped
1 Tbsp. Gluten-free Tamari (soy sauce)
2 tsp. Sesame Oil
Preheat oven to 400 degrees. Combine all ingredients in a large bowl. Form meatballs (this recipe made 24 for me) and place on baking sheet. Bake for approximately 25 minutes or until cooked through.
