My husband makes the BEST chicken tikka masala. I know there is no competing with his, but when I saw this slow cooker version, I had to try it. It's in the slow cooker right now and I'm anxiously waiting for his opinion :)
Slow Cooker Chicken Tikka Masala (adapted from Prevention RD)
Ingredients:
1 (15 oz) can Tomatoes, undrained
1 Onion, chopped
3 Garlic Cloves, chopped
2 Tbsp. Tomato Paste
1 1/2 Tbsp. Garam Masala
1/4 tsp. each Salt & Pepper
1 1/2 lbs. boneless, skinless chicken breasts
1/2 Cup half & half
1/4 Cilantro, chopped
Directions:
Combine tomatoes, onion, garlic, tomato paste, salt & pepper, and chicken breasts in slow cooker. Cook on low for 7-8 hours, or high for 3-4 hours.
Just before serving, stir half & half into chicken. Top with cilantro. Serve over rice, if desired.
Yield: 4 Servings
