I came across a website, The Traveling Naturopath, on Tosca Reno's facebook page. "The Traveling Naturopath" is Tosca's daughter. I love Tosca Reno...her story is extremely inspirational. So when I saw her daughter's website, I knew I had to follow it. I found THIS RECIPE and had to try it. I'm so glad I did...it's fantastic!
Grain Free Protein Pumpkin Loaf

Ingredients:
3 large, organic eggs
1 tsp. pure vanilla extract
2 Tbsp. honey
2 Cups Pumpkin Puree
2 Cups Almond Meal
1/2 tsp. sea salt
1 tsp. baking soda
1 Tbsp. baking powder
2 Scoops Sun Warrior Raw Vegan Vanilla Protein Powder
2 Tbsp. ground cinnamon
2 tsp. nutmeg
1 tsp. ground cloves
1 tsp. pumpkin pie spice
Directions:
Preheat oven to 350 degrees. Grease a loaf pan (coconut oil or cooking spray). In a large bowl, beat eggs. Stir in vanilla. Add pumpkin puree and honey and beat until well combined. Add in almond meal, salt, baking soda, baking powder, protein powder, and spices. Combine well. Pour into loaf pan and bake for one hour or until a toothpick comes out dry.
