Grain-Free Peanut Butter Chocolate Chip Cookie Dough Bites!

OK...stop what you are doing right this minute and MAKE THESE IMMEDIATELY! I'm serious. These are fantastic! My friend, Kelly, sent this recipe to me and I could not wait to try them. I had a problem, though. The lid to my beloved food processor was broken. I had been meaning to order a new lid, but hadn't yet. Well, the minute I saw this recipe, I immediately went to the Cuisinart website and ordered that lid! It came yesterday and I made these pretty much the minute the box was opened. The girls loved them. I love them. Make.them.now. (I know, I'm being a bit dramatic about this but trust me-you won't be sorry!)




Grain-Free Peanut Butter Chocolate Chip Cookie Dough Bites

Ingredients:
1 1/4 Cups Canned Chickpeas, rinsed
2 tsp. Vanilla extract
1/2 Cup + 2 Tbsp. Natural Peanut Butter (be sure to use natural-peanuts only-or they will be oily)
1/4 Cup Honey
1 tsp. Baking Powder
Pinch of salt
1/2 Cup Chocolate Chips

Directions:
Preheat oven to 350 degrees. Combine all the ingredients, except chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get everything processed well. Add chocolate chips and pulse a couple of times. The mixture will be thick & sticky. Form into 1 1/2 inch balls (or use a small cookie dough scoop). Place on a parchment-lined baking sheet and bake for about 10 minutes. Yields about 17 dough balls. ENJOY!
