I saw this recipe on Hungry Healthy Girl and figured it would be worth a shot! I had it this weekend for breakfast-it was great! Definitely a great little snack for a sweet craving, and who doesn't love pumpkin during the Fall?!
Microwave Pumpkin Muffin for One (from Hungry Healthy Girl)
Ingredients:
1 egg
1/2 Cup Pumpkin
2 Tbsp. Unsweetened Almond Milk (any milk would work)
2 Tbsp. Ground Flax
1/2 tsp. Baking Powder
1/2 tsp. Pumpkin Pie Spice
1 tsp. Pure Vanilla Extract
Non-stick Spray
Directions:
Spray mug with non-stick spray. Mix all ingredients in mug. Microwave for 5-7 minutes (I did 6 and it was perfect). Turn mug upside down over plate. Top with your favorite toppings (I put about 1 Tbsp. Almond butter-yum!).
