Easy Apple Pie for One!

When I saw this recipe on one of my favorite blogs, Fitnessista, I knew I had to try it! Yesterday afternoon, I used 2 fresh from the orchard apples and made 2 of them. Well, I barely got a bite because they were gone so fast! I guess you could say they were a hit!

Easy Apple Pie for One   (from The Fitnessista)

Ingredients:
2 Tbsp. Almond Meal
Drizzle of Honey
Pinch of salt
1 Cored, Sliced Apple
Cinnamon
Lemon Juice (from half of lemon)
Small Pat of Butter (1 tsp)

Directions:
In a small ramekin, add almond meal, pinch of salt, and drizzle of honey. Combine and press down. Add apple slices, cinnamon, lemon juice, and pat of butter. Microwave on high for 4 minutes. Enjoy!
