Honey Sesame Chicken

I originally found this recipe at Chef-in-Training. It was a crock pot recipe, but I decided to make a few changes and try it in the oven instead. It was fabulous!

Honey Sesame Chicken  (adapted from Chef-in-Training)

Ingredients:
6 boneless, skinless chicken breasts
salt & pepper
1/2 Cup Raw organic Honey
1/4 Cup Tamari
1/2 Red Onion, diced
2 Tbsp. Organic Ketchup
1 Tbsp. Olive Oil
1 Tbsp. Sesame Oil
4 Cloves Garlic, minced
1/2 tsp. Red Pepper Flakes
1 Tbsp. Cornstarch, dissolved in about 2 Tbsp. water

Directions:
Preheat oven to 400 degrees. Season both sides of chicken with salt & pepper. Place chicken breasts in baking dish. In a small bowl, combine honey, tamari, onion, ketchup, olive oil, sesame oil, garlic, and red pepper flakes. Pour over chicken breasts. Bake at 400 degrees for approximately 30 minutes (until chicken is cooked through). For the last 5 minutes of baking time, add the dissolved cornstarch to thicken sauce.

I served this over brown rice. Delicious!
