Blueberry Quinoa Bars

I found this recipe on the FITMIXER blog. They sounded really good with lots of great ingredients, so I gave them a try. I'm SO glad I did-they were fantastic!

Blueberry Quinoa Bars

Recipe from Fitmixer

Ingredients:
1/2 cup Almond Meal
1/4 cup Ground Flax
1/4 cup Vanilla Protein Powder (I use Sunwarrior)
1 tsp. Cinnamon
1/2 tsp. Sea Salt
1 cup Cooked Quinoa (1/2 cup dry cooked in 1 cup water)
1/2 cup Dried Blueberries
1/4 cup Natural Peanut Butter
1/3 cup Unsweetened Applesauce
1 Egg
1/4 cup Almond Milk

Directions:
Preheat oven to 350 degrees and spray a 9x9 baking dish with cooking spray. Combine ingredients in a medium bowl and mix well. Scoop into prepared pan and press down gently to evenly distribute throughout the pan. Bake for 25-30 minutes or firm and lightly brown. Allow to cool before cutting into bars and storing in the refrigerator.
