Breaded Baked Tofu

So, I'm not a real tofu-lover, but I occasionally will try a recipe that stands out to me. I love tofu in Thai food and I also like it marinated and roasted. In an effort to find a healthier "chicken nugget" recipe for my daughters, I came across this one on one of my favorite blogs, HEALTHY TIPPING POINTand decided to try it. The verdict? We all LOVED it! The girls absolutely devoured them which made me happy as they are a much healthier version of one of their favorite foods. These "nuggets" are gluten-free thanks to Rice Chex cereal and the seasoning really tastes great. Give them a try...you just may love them!




Breaded Baked Tofu
Recipe from Healthy Tipping Point Blog

Ingredients:
1 Block Extra Firm Tofu (Trader Joe's is great and doesn't need pressing)
3 Cups Rice Chex Cereal
1/2 TBSP. Garlic Salt
1/4 tsp Chili Powder
1/2 Cup Cornstarch
2 Eggs
Ketchup, Mustard, or BBQ Sauce, for dipping

Directions:
Preheat oven to 400 degrees and spray a baking sheet with cooking spray. Drain tofu. Slice into 1/4 inch slices. In food processor, blend cereal, garlic salt, and chili powder together. Using three shallow bowls, create a dipping station. Place cornstarch in one, beat the eggs in another, and place cereal blend in the last one. Dip each piece of tofu in the cornstarch first, egg second, and cereal mixture last. Place on baking sheet. Bake for 28 minutes, flipping once during the last five minutes of baking time. Serve with dipping sauce.
