Oat Peanut Pancake

These pancakes are really good. Nice & hearty, yet healthy, on a cold winter morning.

Oat Peanut Pancake

Adapted from the Hungry Hungry Hippie blog

Ingredients:

5 Tbsp. Gluten-free Oats
1 Tbsp. Peanut Flour
1/4 tsp. Baking Powder
pinch of salt
1 Egg
1Tbsp. Maple Syrup
2 Tbsp. Almond Milk, unsweetened

Directions:

Mix all ingredients in a bowl. Heat a medium skillet on medium heat. Spray pan with cooking spray. Once pan is hot, pour batter into pan. Once edges are set and bubbles appear in the middle, flip. Cook for a minute or so.

Remove from pan and add toppings of your choice: nut butter, syrup, berries, bananas, whatever sounds good! Enjoy!
