I am always on the lookout for healthy, gluten-free snack ideas. When I saw the recipe for these cookies on the Running to the Kitchen blog, it looked like a winner to me! I whipped up a batch last night. They are super easy, healthy, and delicious! After trying them, my daughters immediately ran to the kitchen to bag them up to bring to school for snacks. WINNER!
Paleo Chocolate Chip Cookies
Recipe from RUNNING TO THE KITCHEN
Ingredients:
1 Cup Almond Meal
1/8 tsp. Salt
1/8 tsp. Baking Soda
3 Tbsp. Melted Coconut Oil
2 Tbsp. Honey
1 tsp. Vanilla Extract
1 Tbsp. Almond Milk
1/4 C Dark Chocolate, Chopped (I used part of a Lindt Dark Chocolate with Sea Salt bar-yum!)
Directions:
Preheat oven to 350 degrees. Combine all ingredients in a medium bowl. Drop by teaspoon onto baking sheet lined with parchment. Bake for 11 minutes. Cool on baking sheet-they will be soft, but will firm up.
