
Happy Marvelous Monday! Why is today Marvelous, you might ask? Because it's all what you make it, right?!
We had a nice weekend. On Saturday, we ran into my childhood best friend while having lunch at Panera (by the way, definitely try the Mediterranean Salmon Salad if you haven't already!). I had not seen her in YEARS-what an awesome surprise! On Saturday night, hubby had a work call, so the girls & I went to Target and then came home and watched Pitch Perfect-LOVED it! Saturday night was also my first dose of chemotherapy medication, so I was a bit nervous about that. I tried to keep myself in a positive, relaxed state all day. I took the medication right before bed. When I woke up yesterday morning, I felt a bit nauseous and dizzy, but was still able to do my normal routine. I'm still feeling the same-almost like morning sickness. If this is the worse, I can take it. :) I went to the gym this morning and I don't feel any worse, so I'll take that as a positive sign. Now, food on the other hand...blah. Just like when I had morning sickness, all I'm really able to tolerate right now is fruit and bland foods. When I saw a recipe for Chicken & White Bean Soup on one of my favorite blogs, FANNETASTIC FOOD, it sounded perfect. And it was. LOVED it! Give it a try, it's Marvelous!
Chicken & White Bean Soup (recipe adapted from Fannetastic Food)
Ingredients:
3 Chicken Breasts, cooked & shredded (I boiled them in broth and shredded them in my KitchenAid mixer with the beater blade-easiest way ever!)
1 Large Onion, chopped
1 Tbsp. Olive Oil
1 Can Green Chiles, sliced
4 Cloves Garlic, chopped
2 tsp. Cumin
1 tsp. Oregano
Pepper to taste
1.5-2 Boxes (32 oz) Organic, low sodium Chicken Broth
2 Cans Great White Northern Beans
Directions:
In a large stockpot, saute onions in olive oil until translucent. Add green chiles, garlic, cumin, oregano, & pepper. Saute for another 2-3 minutes. Add chicken broth, chicken, and beans. Bring to a boil, cover and simmer for 15 minutes or so. Top with any toppings you like. I used a dollop of greek yogurt, shredded cheddar, avocado and cilantro. Yum!
