Menu!

Yesterday I wanted to dedicate a post to our Seventh Wedding Anniversary, so I'm a day late but figured I would post it anyway :)

I did grocery shopping on Saturday and spent a few hours on Sunday cooking & prepping for the week. I made my usual lentils & quinoa, asian turkey meatballsGrain-free Peanut Butter Chocolate Chip Cookie Dough BitesEnergy Balls, and Crockpot Chicken & Vegetables (simply chicken breasts, potatoes, carrots & onions with a bottle of Newman's Own Lite Italian dressing). I packed our lunches, cut up some cukes & carrots for snacks, and prepped the girls' lunches & snacks.

Breakfasts: Green Smoothies (almond milk, sunwarrior vanilla protein powder, chia seeds, maca, frozen cherries & berries, 2 huge handfuls of spinach)

Lunches: Quinoa & Lentils with Asian Turkey Meatballs

Dinners: Crockpot chicken breasts with veggies, Scrambled eggs sprinkled with cheese & grilled mushrooms (I bought a huge box and forgot I already had some, so I will be eating grilled mushrooms every night this week-good thing I love them!), sauteed seafood blend (shrimp, calamari & scallops) with brocolli, Tilapia foil packets (tilapia with a drizzle of olive oil, topped with sundried tomatoes & capers and roasted on the grill) with brown rice and veggies.

Snacks: I sent all of the energy balls & 1/2 of the cookie dough bites with Anand for the week. I have cookie dough bites, cukes, carrots, hummus, and apples with almond or peanut butter.
