Marvelous in My Monday/Meal Plan/Egg Cups

Good morning and Happy Marvelous MondayKatie over at Healthy Diva Eats gets the week started on a positive note.



Today is MARVELOUS because I spent time yesterday to make my week go smoothly and allow me to meet my health goals. Prepping healthy foods and packing lunches gives me an edge. :)

What is planned for this week? Breakfasts are green smoothies and lunches are quinoa/lentil mix and some asian turkey meatballs with 1/4 avocado thrown in for good measure. :)

Dinners:
Chicken & Sweet Potato Soup

Tilapia "packets" on the grill (sundried tomatoes/capers/olives) with brown rice and grilled veggies (zucchini/mushrooms/red pepper)

Shrimp stirfry

Grilled Salmon over salad

Grilled Chicken with Grilled Veggies

Snacks:
Grain Free Protein Pumpkin Loaf
Chocolate Protein Bites
Energy Balls
Celery/Carrots/Cukes with Hummus and/or nut butter

Yesterday morning, we had "Egg Cups" for breakfast-they were a hit! Simply spray a muffin tin with cooking spray. Place a slice of deli turkey (or whatever you prefer-I used Applegate Farms Turkey Breast) and crack an egg on top of the turkey. Sprinkle with salt/pepper/parmesan cheese/green onions and bake at 350 for about 15 minutes or until egg sets. Yum!
