Watermelon, Feta & Basil Quinoa

When I saw this recipe this morning, i had to make it immediately. This is SO good-light, refreshing, and perfect for a summer dinner!






Watermelon Feta + Basil Quinoa (from HOW SWEET IT IS)

1 cup uncooked quinoa, rinsed

3/4 teaspoon salt

1 1/2 cups chopped fresh watermelon

1 tablespoon honey

2/3 cup crumbled feta cheese

15-20 basil leaves, chopped

Juice of 1 lime

Cook rinsed quinoa according to directions. Let quinoa cool completely and toss with 1/2 teaspoon salt.

Toss chopped watermelon with 1/4 teaspoon salt and drizzle with honey. In a large bowl, combine cooled quinoa, watermelon, crumbled feta and basil. Toss well, then squeeze in lime juice and toss again. Enjoy!
