Lemon Protein Melts

I find a lot of great recipes on THIS BLOG, so when Maria posted this recipe on her Facebook page, I knew I had to test it out.

These little protein bites are chock full of protein...and lemon! They are light & refreshing-perfect if you get a craving for something sweet.





Lemon Protein Melts

Ingredients:
2 Cups Almond Meal
1 Cup Unsweetened Coconut (I used coconut chips for texture)
1 Scoop Vanilla Protein Powder (I used SunWarrior Raw Vegan)
2 Tbsp. Honey
Zest & Juice of 1 Lemon

Combine ingredients. Roll balls; bake at 350 for 20 minutes. You can also eat these without cooking or freeze for a cool treat.
