Turkey Meatloaf Muffins!

I found a great new blog-See it HERE. It's all about eating clean with lots of tips & recipes. I tagged a couple to try this weekend. They are fantastic! The recipe originally came from Jamie Eason-you can see her website for HERE tons of fitness and diet information!
Jamie Eason's Turkey Meatloaf Muffins
Ingredients:
2 lbs. Ground Turkey Breast
3 Egg Whites
1 Cup Oats
1/2 tsp. Ground Cumin
1/2 tsp. Dried Thyme
2 tsp. Dry Yellow Mustard
2 tsp. Black Pepper
2 tsp. Chipotle Pepper Spice (I used chili powder)
2 Tbsp. Garlic Powder
2 Celery Stalks ( I omitted this as I didn't have any on hand)
1 Small Onion, finely chopped
Directions:
1. Preheat oven to 375 degrees
2. Line baking sheet with foil (you can use a muffin tin, but I went with their recommendation of a baking sheet)
3. Mix all ingredients in a large bowl.
4. Roll the mixture into balls and place on baking sheet. (or in tins)
5. Bake for 40 minutes or until meat is cooked through.
Makes 12 muffins or balls.
Serving Size: 2 muffins
Nutritional Information:
80 calories, 2 g. fat, 4 g. carbs, 11 g. protein
